Kopi luwak (civet coffee) is a coffee that consists of partially digested coffee cherries, which have been eaten and defecated by the Asian palm civet (Paradoxurus hermaphroditus). Kopi luwak is brewed from coffee beans that transversed the gastrointestinal tract of an Asian palm civet and were thus subjected to a combination of acidic, enzymatic, and fermentation treatments. The taste of kopi luwak varies with the type and origin of excreted beans, processing, roasting, aging, and brewing.
